I made this dish for a party, and it disappeared quickly!

Instructions:
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and baking soda.
- Add the cold butter pieces to the flour mixture. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
- Pour in the buttermilk and mix until the dough comes together.
- Turn the dough out onto a lightly floured surface and gently knead it a few times.
- Flatten the dough into a rectangle about 1/2 inch thick. Cut it into 12 equal pieces.
- Place a piece of mozzarella cheese in the center of each dough square. Wrap the dough around the cheese, pressing the edges together to seal.
- Arrange the biscuit bombs seam side down on the prepared baking sheet.
- Brush the tops with melted butter and sprinkle with garlic powder.
- Bake for 15-18 minutes, or until golden brown and the cheese is melted and gooey.
- After baking, brush with remaining melted butter and sprinkle with chopped parsley. Serve warm.
