delicious Moroccan chicken tajine

Heat the olive oil in a tajine or large pot over medium heat.

Add the chicken thighs and cook for about 5 minutes on each side until browned.

Remove the chicken from the pot and set aside.

Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.

Add the ginger, cumin, paprika, cinnamon, turmeric, salt, and black pepper to the pot and stir to combine.

Add the chicken back to the pot and coat it in the spice mixture.

Add the olives, preserved lemon, parsley, and cilantro to the pot.

Pour in the chicken broth and stir to combine.

Cover the pot and simmer on low heat for about 45 minutes, until the chicken is cooked through and tender.

Add the raisins to the pot and simmer for another 5 minutes.

Serve the tajine hot with couscous or bread.
