Ingredients :
For the sponge cake:
5 large eggs
150 g sugar
1/2 teaspoon vanilla extract powder or 1 packet vanilla sugar
150 g of sifted T45 oatmeal cake flour
30 g of melted unsalted butter
1 pinch of salt
For soaking:
300 ml of coffee
10 g of instant coffee such as Nescafé
1 teaspoon of sugar
For the mascarpone cream:
4 large egg yolks
120 g sugar
1/2 teaspoon vanilla powder or 2 sachets vanilla sugar
500 g mascarpone cheese
300 g of liquid whole cream (ideally whipping cream)
1 tablespoon icing sugar
For garnish :
Cocoa Powder
Chocolate coffee beans (optional)
