Asparagus Stuffed Chicken Breast

Preparing the Chicken:

  1. Preheat your oven to 375°F (190°C).
  2. Lay each chicken breast on a cutting board and, using a sharp knife, create a pocket in the center, taking care not to cut all the way through.
  3. Season the inside and outside of each chicken breast with salt, pepper, garlic powder, onion powder, smoked paprika, and dried thyme.
  4. Lay a slice of Swiss or mozzarella  cheese inside each pocket.
  5. Place several asparagus spears on top of the  cheese inside the pocket.
  6. Secure the pocket with toothpicks to keep the filling intact.
  7. Heat olive oil in an oven-safe skillet over medium-high heat.
  8. Sear each chicken breast for 2-3 minutes on each side until golden brown.

Finishing in the Oven:

  1. Transfer the skillet to the preheated oven.
  2. Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
  3. Allow the chicken to rest for a few minutes before removing the toothpicks.
  4. Slice each  stuffed chicken breast into medallions for a visually stunning presentation.
