Asparagus Stuffed Chicken Breast

Preparing the Chicken:
- Preheat your oven to 375°F (190°C).
- Lay each chicken breast on a cutting board and, using a sharp knife, create a pocket in the center, taking care not to cut all the way through.
- Season the inside and outside of each chicken breast with salt, pepper, garlic powder, onion powder, smoked paprika, and dried thyme.
- Lay a slice of Swiss or mozzarella cheese inside each pocket.
- Place several asparagus spears on top of the cheese inside the pocket.
- Secure the pocket with toothpicks to keep the filling intact.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear each chicken breast for 2-3 minutes on each side until golden brown.
Finishing in the Oven:
- Transfer the skillet to the preheated oven.
- Bake for 20-25 minutes or until the internal temperature reaches 165°F (74°C).
- Allow the chicken to rest for a few minutes before removing the toothpicks.
- Slice each stuffed chicken breast into medallions for a visually stunning presentation.
