Crunchy Cucumber and Apple Salad with Yogurt Mustard Dressing

  1. Prepare the  Salad Base:
    In a large mixing bowl, combine cucumbers, grated carrot, chopped tomato, chopped apples, and thinly sliced onion. Season lightly with salt to draw out juices and set aside.
  2. Make the Dressing:
    In a small bowl, whisk together thick yogurt, coarse mustard, Italian seasoning, fruit vinegar, and lemon juice until smooth. Adjust salt to taste.
  3. Combine  Salad and Dressing:
    Pour the dressing over the  salad ingredients. Add cooked red beans and gently toss until everything is well coated.
  4. Garnish:
    Sprinkle chopped parsley over the  salad for a fresh, herbaceous finish.
  5. Chill and Serve:
