Directions:
Prepare the crust: Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press mixture firmly into the bottom of a 9-inch springform pan. Chill in the refrigerator to set.
Cheesecake Filling: In a large mixing bowl, beat the cream cheese with 3/4 cup sugar until smooth. Add the eggs, vanilla extract, and mashed bananas, one at a time.
Assemble: Pour the filling over the prepared crust. Sprinkle chopped peanuts evenly over the top.
Bake in a preheated oven at 175°C (350°F) for about 50 minutes or until cheesecake is set.
Garnish and serve: Allow cheesecake to cool completely. Drizzle caramel sauce over top. Refrigerate for at
least 4 hours or overnight. Garnish with sliced bananas and whole peanuts before serving.
