WEIGHT WATCHERS MACARONI SALAD

Ingredients:

  • 1 lb. whole wheat elbow macaroni noodles, uncooked
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup frozen peas, thawed
  • 1 cup cubed reduced-fat sharp cheddar cheese

For the Dressing:

  • 1/2 cup non-fat Greek yogurt
  • 2 tablespoons light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar (optional)
  • Salt and black pepper to taste
