- Prepare the Orange Peels: Wash the oranges thoroughly. Peel them and try to remove as much of the white pith as possible, as it can be bitter. Slice the peels into thin strips or small pieces, depending on your texture preference.
- Blanch the Peels: To remove any remaining bitterness and soften the peels, blanch them in boiling water for about 10 minutes. Drain and rinse under cold water.
- Cook the Peels: In a saucepan, combine the blanched peels, water, sugar substitute, and lemon juice. Bring the mixture to a boil, then reduce the heat and let it simmer. Stir occasionally to prevent sticking and ensure even cooking. If you like, add a pinch of cinnamon or ginger for an aromatic twist.
- Simmer Until Thickened: Continue to simmer the mixture until it thickens and the peels become translucent. This process might take about 25-30 minutes. As the water evaporates, the natural pectin in the orange peels will help the jam set.
- Cool and Store: Once the jam reaches a thick consistency, remove it from the heat and let it cool. Transfer the jam to a clean jar and refrigerate. The jam will continue to thicken as it cools.
