- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C). Lightly coat a loaf pan with cooking spray and set aside.
- Prepare Vegetables:
- In a skillet over medium heat, sauté the onion, bell pepper, garlic, and mushrooms until softened, about 5-7 minutes. Set aside to cool slightly.
- Mix Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, Worcestershire sauce, Italian seasoning, salt, pepper, Parmesan cheese, breadcrumbs, milk, and beaten egg. Mix well until all ingredients are evenly incorporated.
- Add Vegetables and Cheeses:
- Fold in the sautéed vegetables and shredded mozzarella and cheddar cheeses into the meat mixture until well combined. Reserve a small amount of cheese for topping.
- Shape and Bake:
- Transfer the meat mixture into the prepared loaf pan, pressing gently to form an even loaf shape. Sprinkle the reserved shredded cheese on top.
- Bake the Meatloaf:
- Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C) and the cheese is melted and bubbly on top.
- Rest and Serve:
- Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm.
