Low Point Savory Cheesesteak Meatloaf

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C). Lightly coat a loaf pan with cooking spray and set aside.
  2. Prepare Vegetables:
    • In a skillet over medium heat, sauté the onion, bell pepper, garlic, and mushrooms until softened, about 5-7 minutes. Set aside to cool slightly.
  3. Mix Meatloaf Mixture:
    • In a large mixing bowl, combine the ground beef, Worcestershire sauce, Italian seasoning, salt, pepper, Parmesan cheese, breadcrumbs, milk, and beaten egg. Mix well until all ingredients are evenly incorporated.
  4. Add Vegetables and Cheeses:
    • Fold in the sautéed vegetables and shredded mozzarella and cheddar cheeses into the meat mixture until well combined. Reserve a small amount of cheese for topping.
  5. Shape and Bake:
    • Transfer the meat mixture into the prepared loaf pan, pressing gently to form an even loaf shape. Sprinkle the reserved shredded cheese on top.
  6. Bake the Meatloaf:
    • Place the meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C) and the cheese is melted and bubbly on top.
  7. Rest and Serve:
    • Remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve warm.
