Weight Watchers Skinny Double Chocolate Chip Muffins

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line 18 muffin cups with paper or foil liners. Alternatively, you can spray the muffin cups with nonstick cooking spray if you don’t have liners. Set aside.
  2. Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour or pancake mix, cocoa powder, zero-point sugar substitute, baking powder, and baking soda. Add 8 tablespoons of no sugar added chocolate chips to the dry mixture and stir to combine.
  3. Prepare Wet Ingredients: In a separate mixing bowl, whisk together the skim milk or unsweetened almond milk, eggs or egg whites, vanilla extract, and unsweetened applesauce until well combined.
