Low-Point Shrimp Fried Rice Recipe for Weight Watchers

  1. Prepare Ingredients:
    • Ensure shrimp are cleaned and deveined. Dice vegetables and mince garlic. Beat eggs in a small bowl.
  2. Cook Shrimp:
    • Heat a non-stick skillet over medium-high heat and coat with cooking spray or 1 teaspoon of vegetable oil. Add shrimp, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Stir-Fry Vegetables:
    • In the same skillet, add garlic and cook for 30 seconds until fragrant. Add diced vegetables and stir-fry until tender-crisp, about 3-4 minutes.
  4. Scramble Eggs:
    • Push vegetables to one side of the skillet. Pour beaten eggs into the cleared space and cook until set, about 1 minute. Stir gently to scramble eggs with vegetables.
  5. Combine Ingredients:
    • Add cooked cauliflower rice (or brown rice) and cooked shrimp to the skillet. Stir to combine all ingredients evenly.
  6. Season and Finish:
    • Drizzle soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir well to coat everything evenly. Taste and adjust seasoning with salt and pepper as desired.
  7. Serve:
    • Continue to stir-fry for another 2-3 minutes until heated through. Remove from heat and serve hot.
