Prepare the Potatoes
- Peel the potatoes and grate them using a coarse grater.
- Place the grated potatoes in a large bowl and cover them with water. Mix well by hand and set aside.
Prepare the Onion and Pepper Mixture
- Peel and dice the onion.
- Wash and clean the red pepper, removing the stalks and seeds, and cut it into pieces.
- Heat the oil in a pan over medium heat. Once hot, add the diced onion and cook for 3-4 minutes.
- Add the chopped red pepper to the pan and mix well. Simmer for 5-7 minutes, then remove from heat.
Prepare the Potato Mixture
- Drain the water from the grated potatoes and squeeze out any remaining water with your hands. Place the potatoes in a bowl.
- Add the eggs, salt, marjoram, black pepper, and nutmeg to the bowl with the potatoes. Stir well to combine.
