Sweet potato cornbread for the holidays

INGREDIENTS
▢1 cup all-purpose flour
▢1 cup cornmeal
▢2 teaspoons baking powder
▢1/2 teaspoon baking soda
▢1/4 teaspoon salt
▢1 teaspoon pumpkin pie spice
▢1/2 cup sugar
▢2 eggs room temperature
▢1 cup buttermilk room temperature
▢2 tablespoons honey
▢1/2 cup plus 1 tablespoon unsalted butter melted and slightly cooled
▢1 cup sweet potato mashed about 1 large sweet potato
▢1/2 tablespoon orange food coloring optional
