WW Low Carb Feta Pasta

  1. Begin by cooking the low carb pasta according to package instructions until al dente. Drain and set aside.
  2. Preheat your oven to 400°F (200°C). Place the block of feta cheese in the center of a baking dish and surround it with cherry tomato halves. Drizzle olive oil over the cheese and tomatoes, then sprinkle minced garlic, dried oregano, red pepper flakes (if using), salt, and black pepper evenly over the top.
  3. Bake in the preheated oven for 20-25 minutes, or until the feta cheese is softened and the tomatoes are bursting with flavor.
  4. While the feta and tomatoes are baking, heat a large skillet over medium heat. Once hot, add the spinach leaves and cook until wilted, stirring occasionally.
  5. Once the feta and tomatoes are done baking, remove them from the oven and use a fork to mash the softened feta cheese and mix it with the roasted tomatoes until well combined.
  6. Add the cooked low carb pasta and wilted spinach to the skillet with the feta and tomato mixture. Toss everything together until the pasta and spinach are evenly coated with the creamy sauce.
  7. Serve immediately, garnished with fresh basil leaves if desired.
