4. Add the lemon broth (about 240ml). To avoid seeds, squeeze the lemons and strain the juice before adding to the mixture.
5. The cream will begin to gain consistency. If you prefer, you can use a blender to mix all the ingredients at once.
6. Reserve some lemon zest for the final decoration and mix the rest with the cream, providing even more flavor and texture.
Assembly:
1. To prevent the lemon zest from drying out, wrap it in plastic wrap or place it in a plastic bag until ready to decorate.
2. In a refractory, place a layer of the wonderful, consistent cream.
3. Soak the cornstarch biscuits in milk and place them on top of the cream.
4. Alternate layers of cream and biscuit until all ingredients are used. In total, 2 layers of cornstarch biscuits were used in a 30x20x5cm dish.
5. Place the pavé in the fridge for 2 or 3 hours, until it becomes very firm.
Decoration:
1. Before serving, add the reserved lemon zest. For a special touch, cut two lemon slices, make a small cut in the center and place them on top of the pavé.
