- Prepare the Shrimp:
- Pat the shrimp dry with paper towels and season them with salt and black pepper.
- Cook the Shrimp:
- In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
- Add the shrimp in a single layer and cook for about 1-2 minutes on each side, or until the shrimp turn pink and are just cooked through. Remove the shrimp to a plate and set aside.
- Make the Sauce:
- In the same skillet, add the remaining 2 tablespoons of butter and 2 tablespoons of olive oil.
- Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute, or until the garlic is fragrant but not browned.
- Pour in the white wine (or chicken broth) and bring to a simmer. Let it reduce by half, about 3-4 minutes.
- Stir in the lemon juice and lemon zest.
- Combine Shrimp and Sauce:
- Return the cooked shrimp to the skillet and toss to coat in the sauce. Heat through for about 1 minute.
- Remove from heat and stir in the chopped parsley.
- Serve:
- Serve the shrimp scampi over cooked pasta, or with crusty bread to soak up the sauce.
- Garnish with grated Parmesan cheese and extra lemon wedges if desired.
Tips:
- Wine Selection: Use a good-quality dry white wine that you enjoy drinking. Pinot Grigio, Sauvignon Blanc, or Chardonnay are excellent choices that add nice acidity to the dish.
- Avoid Overcooking Shrimp: Shrimp cook very quickly and can become tough if overcooked. Remove them from the skillet as soon as they turn pink.
- Serving Suggestion: Although traditionally served with pasta, shrimp scampi can also be served over rice or alongside a simple green salad for a lighter option.
