1 onion, chopped
1–2 cloves garlic, minced
1 can (10.75 oz.) cream of mushroom soup
1 cup sour cream or Greek yogurt
1 package (16 oz.) frozen mixed vegetables (like peas, carrots, green beans, etc.)
1 bag (16 oz.) frozen tater tots
1–2 cups shredded cheddar cheese
Salt and pepper, to taste
Optional seasonings: dried basil, oregano, or thyme
