INGREDIENTS
- 3-4 chicken breasts
- 8 oz. of cream cheese
- 1/4 cup of chopped green onions or scallions
- 1/2 cup of fresh mozzarella cut into small cubes
- 1/8 cup of sun-dried tomatoes squeezed dry but save the oil separately
- 1 cup of chopped spinach
- 6 leaves of basil chopped
- 5-6 cloves of garlic chopped
- 2 tbsp. of pesto sauce
- 1/2 tablespoon of Italian seasoning
- Salt and pepper to taste
- 1 tablespoon of butter; 1 tbsp of olive oil
- chicken breast seasoning 1 tsp of salt, pepper, garlic powder, and paprika
- toothpicks for closing up stuffed chicken
