Add the lemon zest or vanilla.
Beat the egg whites until very stiff, and gently incorporate them into the mixture.
Pour the fromage blanc, sugar and egg mixture into a springform mold approximately 20cm in diameter, previously buttered or lined with grease spray.
Place the cake in the oven at 180°C for 30 minutes.
Remove from the oven and let cool for 1 hour before unmolding.
